Harvested from Mandeler Dellchen, our favorite south-facing, red sandstone vineyard, the grapes were carefully sorted and picked over three days, with a focus on perfect ripeness. The first two-thirds of the grapes underwent carbonic maceration for 13-14 days, while the final third was left for skin fermentation for 12 days—just a little longer than previous vintages.
The result? A wine of pure elegance and refined aromatics, with the complexity that comes from the meticulous process. This Spätburgunder is a true reflection of the land and the care we put into it—elegant, intricate, and crafted with heart.
